It's about the cake!
Making "cake toppers" and special orders for cupcakes is a lot of fun- BUT let us not forget the real deal here..... THE CAKE. Believe it or not- I have not always been a fan of cake. So maybe that is why I am a little obsessed with making really GOOD cake, because why waste the calories on something that isn't just really, really well... Delightful! I love fillings and drizzles and of course the frosting has to really be delicious.
The best compliment so far passed on to me about my cupcakes is "eating these cupcakes was an out of body experience...." Does it get any better? :)
This is what I was looking at Saturday morning at 4am right before I went to bed...... My garage fridge (and some of my kitchen fridge) was stuffed FULL of cupcakes for a wedding reception. I was planning to go to the Bay Area the next morning so I wanted to get them all done. The bride and groom choose Lemon Poppyseed, Caramel Apple, Samoa, Chocolate Mint, and Pumpkin Spice with a cream cheese filling. So many little cakes!! And I know that each one deserved attention so that it could represent correctly:)
The Bride (Christa! So beautiful that night!!!) promised me pictures so I will post them shortly.
This was for the "cutting the cake" picture, with their initials and on top a crown that matched the cupcake wrappers they cut with their cricut machine.

Peanut Butter and Chocolate!
Start of the butterfly cakes! Happy Birthday Avalon!
This cake was an 8" 5 layer chocolate cake with alternating layers of chocolate mousse buttercream, and peanut butter filling, then covered with chocolate caramel peanutbutter ganache! Death by peanut butter and chocolate! The ganache was a little shiny so I couldn't get a clear picture :)

CAKE!!!



This cake is probably the one I wanted to eat the most. Ordered for her mother's birthday my friend had rave reviews. It was 5 layers of Italian cream cake with alternating fillings of coconut walnut cream cheese filling and vanilla cream. Then topped with caramelized walnuts and a little birthday message.
The chocolate strawberry cake was a same day order so I didnt have time to decorate the top, but it had layers of chocolate cake with fresh strawberrys and chocolate mousse buttercream filling, then topped with ganache.
Let everyone eat cake! :)

Let them eat cake!


I heard that bananas and chocolate were the favorite for this birthday girl so I did three layers of chocolate cake and in between I placed fresh bananas, dark chocolate ganache and whipped banana cream pudding- then ganache poured over the whole thing. I knew this would be a messy cake (and it was) but that makes it a little more fun to eat right? And it got rave reviews.
This cake was a gift so I allowed my daughter to insist on the big whipped cream K on top- not the most professional but fun :)
Cakes are $30 and available to order in almost any flavor (24 hours notice please- additional charge for themed cakes with hand made decorations, themed cakes need 3 days notice)

Italian Cream Cupcakes


These are SOOO good! This flavor is for people who like a little something extra in their cake.
It's a yellow cake that is perfectly moist and light- I think beating the egg whites and the added coconut makes all the difference. The coconut sweetens the cake and gives it great texture without making it taste coconutty. (Is that a word?) I was thinking about doing a filling but they just didn't need it.
There was no piping this frosting, I needed a spoon! It is a whipped cream cheese frosting with chopped walnuts and a little more coconut. This combo reminds me of a vanilla version of german chocolate cake in a way. One of my new favorites. I think it is "Italian" cream cake because it really does taste like something you would pick up in an Italian bakery :)

Lemon and Orange
Spring is the time to think citrus! Our speech therapist Kelly has been coming for a couple years and we just love her. We were sad to say goodbye on her last day so to sweeten it up I made Lemon Cupcakes with my favorite meringue buttercream that had melted orange creme kisses. Yum. We love you Kelly!
